Farnham Kitchen consists of the construction of a new kitchen with a 400-seat dining room which is fully air-conditioned and furnished to the standards of the Department of National Defense. With a total area of approximately 20,000 square feet, the kitchen serves 800 meals an hour, or 400 meals per 30 minutes.
SBSA’s mandate included consultation for the supplier of the steel structure and complete assembly design service including ductile bracing assemblies as well as transfer trusses.
This one-story structure features a combination of structural steel as well as cable-stayed wood framing for the dining room ceiling.
This new kitchen also earned a LEED silver certification in part due to the electromechanical systems which have been optimized for energy performance. The heat from compressors in cold rooms and freezers is recovered to preheat domestic water and serve heat pumps in winter.
